Hop flowers ready to be picked from the bine, as the long stems are called - the base of the flower produces a yellow oily substance called lupulin that gives the hops their bitter flavour. Stephanie Jaworski, one of the owners, told me that hops were grown over a large region around Vankleek Hill in the 1940s but climate change increased rainfall (not good for hops) and the growers moved to Washington State.
